- Hervimos la carne en una olla, agregamos sal, laurel, la mitad de una cebolla y un gajo (diente) de ajo.
- Hervimos las 4 papas grandes y una zanahoria, agregamos sal.
- Enfriamos la papa un poco y en un sartén amplio ponemos un chorrito de aceite, agregamos 1 cebolla cortada en juliana, tomate colorado en cubitos y 2 ajos triturados o finamente picados, doramos un poquito y agregamos las papas y la zanahoria.
- Mezclamos todo y freímos, agregamos un poco más de sal al gusto y pimienta.
- Desmenuzamos la pechuga de pollo o la carne de puerco.
- Picamos finamente la otra cebolla y el perejil y esto lo ponemos en un traste hondo junto con el queso y mezclamos. Cortamos por aparte rodajas de rábano y la lechuga.
- Extendemos las tortillas untamos un poquito de mole, agregamos la papa mezclada y la carne desmenuzada, enrollamos.
- Y para terminar los bañamos con mole y agregamos la mezcla de cebolla con perejil y queso.. lechuga y listo! ❤️
