- 1 kg carne de puerco (pierna, falda, espinazo, cabeza, huesos)
- Se puede sustiruir una parte de carne por pechuga de pollo

- 1 diente ajo
- 1 cdt orégano
- Al gusto sal
- Al gusto sazonador de pollo en polvo
- Salsa roja
- 5 Chiles guajillo
- Pizca canela en polvo
- Pizca clavo en polvo
- Pizca comino en polvo
- Pizca pimienta negra en polvo
- 3 dientes ajo
- 1/4 pz cebolla
- 1/4 cdt sal
- 1 cda sazonador de pollo en polvo
- Complementos
- 1/4 lechuga iceberg rebanada muy fino
- 1/2 pz cebolla picada fino
- 1 tz rábanos picados o rebanados
- 2 aguacates en cubos
- Orégano en polvo
- Tostadas
- 1/4 lt crema espesa
- Limones
- Chicharrón (opcional)

- Se enjuaga el maíz y se le quitan los puntos negros que pudiera traer. La carne se limpia. En una olla alta se pone el agua, el maíz, la carne, la cebolla, el ajo con todo y cáscara y el orégano


- Cuando empiece a hervir dejar pasar 15 min para agregar la sal y dejar hasta que se cueza la carne, en cuanto esté cocida la retiramos de la olla y dejamos que se siga cociendo el maíz. Si se usó pollo sacarlo antes que la carne de puerco pues se cuece más rápido. Dejar que se enfríe un poco y la desmenuzamos.


- Mientras le quitamos las semillas a los chiles guajillo y los ponemos en una cacerola con agua para suavizarlos. En la licuadora ponemos la cebolla, ajos, canela, clavo, comino, pimienta, sal y sazonador junto con los.chiles y un poco del agua de cocción y se.licúa todo.



- Pasamos por un colador la salsa y la agregamos al caldo y seguimos dejando para que se cocine todo junto hasta que los maíces estén suaves y hayan reventado.


- Se sirve bien caliente, se le agrega lechuga, rábanos, cebolla, aguacate, jugo de limón un poco de orégano en polvo, chicharrón, si quiere que pique un poco más se puede usar chile en polvo o salsa de chile de árbol. Se acompaña con tostadas.
